Thai Noodles

This evening I craved for some Thai noodles so I decided to make some at home. This meal only took 1/2 an hour to make and it was super delicious.
Prep time: 10 mins
Cooking time: 20 mins
Serves: 2 hungry people

Ingredients:
1/2 bag of Thai flat noodles
2 tbs Sesame Oil
Salt and Pepper for taste
1/2 cup Oyster Sauce
1 tbs Rice Vinegar
2 Garlic cloves
2 tbsp water
2 cups Broccoli cuts
1 chopped Onion (if you're an onion lover, add more)
1 or 2 Chicken breast (depending on how much chicken you want)
Fresh cut Cilantro for garnish
2 tbsp Olive Oil
2 Eggs

Preparation:
In a large bowl soak noodles in warm water to get them soft.
In a small bowl mix sesame oil, oyster sauce, rice vinegar and water together.
Cut chicken breast into 1/2 inch cubes or slices

Cooking:
A Wok or a pan close to it's shape would also work. Turn on your stove to high. Add Olive Oil to your pan. Once the oil is hot, add your eggs...scrambling them constantly. Add a few sprinkles of salt to the eggs for taste. Turn stove to Medium heat. Use your spatula to move the eggs to the side of the pan then add onions and garlic to the other side. Once the onions are a little brown you can add the the broccoli into it. Let it cook for a minute and then pour in 1/2 of the small bowl of mixed liquids. While it cooks, strain water from the noodles and put into pan and stir with the rest of ingredients. Lower stove temperature and cover for 2 mins. Remove cover and pour the rest of small bowl of mixed liquids into it. Stir everything cover again for 3 mins. This is to cook the noodles and to get them to soften up without over cooking. If noodles are still not fully cooked yet, you may add a bit of water and cook with lid on (this will create a steam reaction for it to cook faster). Once the noodles are soft; it's ready to be served. Garnish
with fresh cut cilantro and server! Enjoy...Bon Appetite!
